為什麼有人吃澱粉會變成脂肪，有些人卻不會？對此，減重醫師蕭捷健表示，關鍵就在於要肌肉足夠與粒腺體功能好，要達到這2要件，建議做到3件事，包括用餐時，先吃肉、菜，再吃澱粉，另要重視蛋白質品質，建議吃瘦白肉、魚肉、蛋或豆腐等優質蛋白，與補充白腎豆、苦瓜胜肽、鉻等營養素，都有助於改善醣類代謝，把澱粉吃進肌肉裡。

蕭捷健在臉書粉專PO文指出，肌肉能儲存醣（肝醣）供人體使用。肌肉量少的人，全身肌肉最多只能儲存約400卡的醣；而肌肉量多的人，儲存量可以達到2000卡，當肌肉量不足時，醣就容易轉化為脂肪堆積。

蕭捷健指出，我們的細胞裡還有一個重要的發電機—粒線體。當粒線體功能良好時，身體能更有效地利用醣類，減少脂肪堆積。也就是肌肉量足夠與粒腺體功能強時，吃澱粉才能好好瘦身。
